This primer covers the use of FOSS from schools to universities. It provides a brief overview of how it can help in setting up the IT infrastructure and administration of educational institutions and considers software (mainly proprietary) which is now used as the basis for IT curricula and alternative FOSS which is available.

case studies in the primer
First of all I like the primer a lot. It addresses a lot of items that are of interest to the people that like to change their ideas, but need the data.
However, case studies and best practices were missing. We can offer you one.
About two years ago Uganda Martyrs University (where I am on the staff) has decided to move to OSS completely (back end and desktop). Since then we have gained a lot of knowledge on migrating from MS to OSS.
At present we have migrated the complete back office and about 60% of the desktops (100% of the computers that are accessed by the students). Total computers on campus about 250 in a LAN.
